Vegetable Sheet Pan Dinner

Ingredients
  • Sauce:
  • ¼ cup olive oil
  • ¼-1/2 cup balsamic vinegar
  • 2 tablespoon minced garlic
  • ½ tablespoon red pepper flakes
  • ½ teaspoon black pepper
  • ½ teaspoon ground ginger
  • 2 tablespoon honey
  • Vegetables:
  • ½ red onion chopped
  • 1 cup brussel sprouts ends cut and cut in half
  • 1½ cup fresh broccoli broken into florets
  • 1 cup green beans with ends cut
  • few sprigs of fresh thyme
Instructions
  1. Cover the vegetables in the balsamic mixture and cook at 350 for 15 minutes.
  2. Turn off the oven.
  3. Remove and add tomatoes to hot pan, toss around and place back in the turned off oven for 5 minutes.
  4. Sprinkle parmesan cheese on top as desired.
