Coconut Green Lime Smoothie

Ingredients
  • 1 cup baby spinach, lightly packed
  • ¼ cup unsweetened shredded coconut, plus ½ teaspoon more for topping
  • 1 tablespoon golden flaxseed meal
  • 1 tablespoon fresh lime juice
  • 1 teaspoon vanilla
  • ½ teaspoon lime zest
  • 1 pinch sea salt
  • 1 (1g) packet stevia/erythritol blend or 2 teaspoons honey or 1 tablespoon maple sryup (see note)
  • ½ cup plain unsweetened almond milk
  • 1 cup ice cube
Instructions
  1. Add all ingredients except the ice cubes into a blender and process until smooth.
  2. Add the ice cubes and process until thick and creamy, being careful not to over blend.
  3. Serve immediately.
