Keto Reuben Salad

Reuben sandwiches are seriously one of my weaknesses! They are like an adult grilled cheese, so flavorful, greasy, and good. I definitely had to come up with a Keto friendly reuben recipe that this reuben salad is just that. Simple and delicious all the flavors of a reuben and not loaded with carbs. Plus it’s a great make ahead option and would be delicious for a large gathering too.

How to make this low carb reuben:

First you want to chop the Swiss cheese into little squares. Then chop the pastrami or corned beef into slightly larger squares.

Using approximately half a head of cabbage or a little less chop it into squares.

Combine the cheese, pastrami, and cabbage in a large mixing bowl. 

For the homemade Russian dressing in a small mixing bowl combine the mayo, sugar free ketchup, diced pickles, salt, pepper, and Apple Cider Vinegar. Mix together well.

Lastly add the Russian dressing to the large mixing bowl with the salad. Stir, mix, shake it all up.

Serve immediately or store in a airtight container in the refrigerator. So yummy and delicious, I will eat on this for days!

Ingredients
  

  • half head of green cabbage
  • 1 pound pastrami or corned beef
  • 1/2 pound swiss cheese
  • Russian Dressing:
  • 2 cups mayo
  • 5 tablespoons sugar free ketchup
  • 1 tablespoon apple cider vinegar
  • 1/2 cup finely sliced dill pickles
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  • Chop the cabbage into longer rectangular pieces.
  • Combine the cheese, pastrami, and cabbage in a large mixing bowl.
  • For the homemade Russian dressing in a small mixing bowl combine the mayo, sugar free ketchup, diced pickles, salt, pepper, and Apple Cider Vinegar. Mix together well.
  • Lastly add the Russian dressing to the large mixing bowl with the salad. Stir, mix, shake it all up.
  • Serve immediately or store in a airtight container in the refrigerator.
