Anything taco related is definitely a staple in my house – from taco casserole to taco salad we love to eat tacos. This loaded taco chaffle is a fun way to mix up tacos because it’s a mix between a chalupa, taco, and taco salad – it’s actually fry bread style.

What is fry bread?

Fry bread is a flat dough that is typically deep fried, it can be eaten a variety of ways. Fry bread is not Keto friendly, but it is the inspiration behind this taco chaffle which is Keto friendly. This chaffle uses coconut flour and baking powder to give is a more dough bread inspired taste.

A chaffle is the hottest new keto trend, it’s a cheese and egg waffle. The original chaffle has evolved and now there are many creative ways to eat a chaffle.

What meat do you use for a taco chaffle?

For this recipe, I use ground beef. However you could switch up this loaded taco chaffle and use chicken, pork, shrimp, or steak!

Can you eat ground beef on the keto diet?

Yes ground beef is a great source of protein and allowed on the ketogenic diet. Meat like ground beef is zero net carbs per five ounces.

Can I have sour cream on Keto?

Sour cream is also allowed on Keto, it is considered a high fat dairy.

How do I get my taco chaffle crispy?

There are a few tricks for getting a crispy chaffle. First I recommend sprinkling a little cheese on the top and bottom of your mixture in the waffle maker. Another trick to a crispy chaffle is letting it sit and cool for a few minutes before eating it.

I highly recommend this keto friendly taco seasoning recipe. It is so easy to make and you most likely have all the spices already in your pantry. There are many benefits of making your own taco seasoning too!

How many taco chaffles does this recipe make?

It depends on the size of your waffle maker. This recipe makes 1 Belgium style chaffle (with a larger waffle maker) or 2-3 mini chaffles (with a mini waffle maker).

How do you reheat chaffles?

This is a great recipe to reheat a chaffle. It is is easy because you can reheat the chaffle and then add the toppings to it for a quick and easy meal. The best way to reheat is to let is cool completely, then place is in the freezer for 30 minutes to flash freeze, after 30 minutes remove and store in an air tight ziplock baggie.

How to make this loaded taco chaffle:

First in a small mixing bowl, whisk together flour, baking powder, and salt.

Next in a large mixing bowl, beat eggs until frothy. Once frothy add in the cheese and beat until well combined, add dry ingredients.

Preheat waffle maker to medium high heat and coat generously with low carb cooking spray.

Pour batter into waffle maker, close and cook for 4-5 minutes.

Now to make the taco meat over medium high heat, brown ground beef. 

Once beef is browned add ¼ cup of water and add seasonings.

Stir well and heat over low-medium for 7-9 minutes or until water is absorbed.

Plate waffle and top with ground beef, lettuce, tomato, avocado, and sour cream and serve!
