Cook ground beef in a skillet over medium heat for 7 to 10 minutes.
Add 4 tablespoons of taco seasoning to the ground beef before it’s almost done. You can use low carb taco seasoning or make your own using my recipe for taco seasoning. (Do not any liquid with the seasoning.)
Drain the excess grease from the ground beef. You can also use a paper towel to help do this.
Place the ground beef in a square casserole dish.
Mix together with the salsa, 1 cup of cheese, and cottage cheese.
Mix well until combined and flatten it out in the casserole dish.
Top the casserole with the remaining 1/2 cup of cheese.
