Ingredients
  

  • 5 cups frozen chopped broccoli defrosted
  • 1 cup sour cream
  • 1 egg beaten
  • 6 ounces softened cream cheese
  • 1/2 onion chopped
  • 1/4 cup butter unsalted
  • 2 ounces crushed pork rind crumbs
  • 2 cups shredded cheddar cheese
  • optional dash of salt and pepper

Instructions
 

  • Preheat the oven to 350 degrees.
  • Place the defrosted broccoli, sour cream, egg, cream cheese, butter, 1 cup of the shredded cheddar cheese as well as salt and pepper to taste into a large mixing bowl.
  • Stir together until the mixture is combined well.
  • Layer the broccoli mixture into the bottom of a greased casserole dish. Spread it out evenly. Sprinkle the other cup of cheddar cheese on top of the broccoli mixture.
  • Top the casserole with the crushed pork rind crumbs.
  • Bake for 30 minutes until the casserole is browned and bubbly.
  • Let sit for 5 minutes, and serve hot.
