Ingredients
  

  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder
  • ½ teaspoon Himalayan pink salt
  • 3 large eggs
  • ½ cup mozzarella cheese shredded
  • ½ cup sharp cheddar cheese shredded + ¼ cup for topping
  • ½ pound ground beef
  • 2 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ¼ cup sour cream
  • 1 ripe avocado diced
  • ½ cup tomato diced
  • ½ cup romaine lettuce shredded

Instructions
 

  • In a small mixing bowl, whisk together flour, baking powder, and salt.
  • In a large mixing bowl, beat eggs until frothy.
  • Add cheese and beat until well combined.
  • Add dry ingredients.
  • Preheat waffle maker to medium high heat and coat generously with low carb cooking spray.
  • Pour batter into waffle maker, close and cook for 4-5 minutes.
  • Over medium high heat, brown ground beef.
  • Once beef is browned add ¼ cup of water and add seasonings.
  • Stir well and heat over low-medium for 7-9 minutes or until water is absorbed.
