  • 2 pounds ground beef
  • 2 bunches of scallions
  • 1 teaspoon garlic
  • 1 tablespoon Worcestershire
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup thousand island dressing use a brand that is low in carbs and sugar or make your own


  • Preheat the oven to 350 degrees Fahrenheit.
  • In a large skillet add the ground beef, chopped scallions, garlic, and Worcestershire sauce.
  • Cook over medium heat until the meat is browned.
  • Drain the excess grease from the meat.
  • Add the beef mixture to a greased casserole dish and mix in one cup cheddar cheese, one cup mozzarella cheese, 1/2 cup thousand island dressing.
  • Flatten the mixture in the casserole dish.
  • Top with the remaining one cup of cheddar cheese.
  • Bake for 20 minutes at 350 degree Fahrenheit and broil on high for 5 minutes.
  • Place the casserole on top of shredded lettuce, add tomatoes, pickles, and drizzle with thousand island dressing.
