For the buns:
Preheat the oven to 375 degrees Fahrenheit.
Line a baking sheet with parchment paper.
Mix the mozzarella cheese and cream cheese in a microwave-safe bowl.
Microwave on high for 1 minute.
Stir the mixture and then microwave again on high for 30 seconds, the result should be a gooey sticky dough like.
In a separate bowl, whisk the almond meal, flaxseed, salt, and baking powder.
Add the cheese mixture and egg to the dry ingredients previously combined, stir with a rubber spatula.
Knead the dough with your hands until all the ingredients are well combined, about 1 minute. If at any point your dough becomes hard, microwave it for 20 seconds, be careful not to overcook it.
Wet your hands with water or oil, with the dough, make 6 balls of the same size. Place them on top of the parchment paper previously prepared.
Flatten them a just a little bit and top with the everything but the bagel seasoning.
Bake for 12 minutes, then broil on low for another 2 minutes.
Turkey Patties:
While the buns are in the oven, in a medium bowl, mix all the ingredients for the patties.
Shape into six one inch thick patties.
Spray a large skillet with oil and cook them on the stovetop on medium heat for about 5 minutes each side.
Assembly:
Once buns are ready, remove from the oven and let them cool for at least 5 minutes.
With a bread knife slice the buns in halves, sideways.
Assemble the sliders starting with the turkey patties, followed by cheese and arugula.
Serve warm.
