How to make the noodles: First reheat oven to 375 degrees Fahrenheit.
Grease a 8x8 pan extremely well. You definitely want to pay attention to this step otherwise it can be hard to get the "noodles” out in one sheet.
Then in a blender combine two eggs, garlic, cream cheese, and black pepper. Blend until the mixture is well combined.
Pour the mixture into the sheet pan.
Bake at 375 degrees Fahrenheit for 9 minutes or until the eggs are done. Remove from oven.
Using a spatula carefully remove the mixture from the pan so you have a solid sheet of noodles.
Then carefully roll up. Cut into pieces, as thin or wide as you prefer for your noodles. Unroll the noodles after they are cut.
Now to make the sauce: Add the butter, Parmesan cheese, Mascarpone, and buffalo size to a small microwave safe bowl.
Microwave in thirty second increments, whisking in between.
Once the sauce is melted and whisked. Toss and carefully add to the noodles!
