Coconut Green Lime Smoothie

Ingredients
  

  • 1 cup baby spinach lightly packed
  • 1/4 cup unsweetened shredded coconut plus 1/2 teaspoon more for topping
  • 1 tablespoon golden flaxseed meal
  • 1 tablespoon fresh lime juice
  • 1 teaspoon vanilla
  • 1/2 teaspoon lime zest
  • 1 pinch sea salt
  • 1 1g packet stevia/erythritol blend or 2 teaspoons honey or 1 tablespoon maple sryup (see note)
  • 1/2 cup plain unsweetened almond milk
  • 1 cup ice cube

Instructions
 

  • Add all ingredients except the ice cubes into a blender and process until smooth.
  • Add the ice cubes and process until thick and creamy, being careful not to over blend.
  • Serve immediately.
