- 1/2 cup shredded mozzarella cheese
- 1 large egg
- 2 tbsp pumpkin puree
- 1/2 tsp pumpkin spice
- 1/2 tsp cinnamon
- pinch stevia extract powder
Preheat your waffle maker.
In a bowl combine the pumpkin spice, cinnamon, stevia, and cheese and whisk together.
Add the pumpkin puree and egg, continue whisking until you have a well combined batter.
Pour half of the batter in the waffle maker and cook until done. (Cooking time depends on waffle maker.)
Let cool for 3 minutes before serving.
