I seriously can not get enough of chaffles, I have had so much fun experimenting and creating different combinations. I must admit they just keep getting better. This cinnamon apple chaffle tastes just like apple pie with vanilla ice cream – if you aren’t drooling you seriously should be.
What is a chaffle?
The original chaffle recipe is simply a combination of egg and cheese. However this trend has grown into many variations and people can’t get enough of them. Savory chaffles usually use cheddar cheese, while dessert chaffles typically usually use mozzarella since it is a less flavorful variety of cheese. For this apple chaffle recipe I used a mix of mozzarella and cheddar cheese.

Are apples Keto friendly?
For this recipe you can use Erythritol apple flavor to keep the carbs lower or you can use 1/4 cup chopped and skinned Granny Smith apple which has only 3.8 carbs. Apples are high in carbs and should only be eaten in extreme moderation typically on the Ketogenic diet.
Could I eat the cinnamon apple chaffle with ice cream?
I highly recommend the vanilla bean sauce with this recipe, but you could enjoy this cinnamon apple chaffle with a bowl of Keto friendly low carb ice cream.
Can I freeze a dessert chaffle?
Yes you can freeze any chaffle recipe. If you do choose to freeze a chaffle you will need to be mindful on how to heat it up – I would suggest the oven or air fryer so you can keep the crispiness. I actually would recommend using a mini waffle maker and freezing the extra waffles as the nutrition info can add up quickly for this recipe.

How to make a Keto friendly vanilla bean sauce
Before you make the chaffle you first want to make the vanilla bean sauce.
Start with a medium saucepan, add heavy whipping cream, ghee, and vanilla bean.
Heat over medium high heat until just starting to boil, then add sweetener and lower heat and simmer for 10 minutes. Remove vanilla bean and scrape remaining vanilla seeds into whipping cream, then discard bean.
Remove from heat and add in egg yolk while whisking vigorously.
Stir in cream cheese until melted.
Put vanilla sauce in heat safe container and place in fridge to cool.
How to make Cinnamon Apple Chaffles
Next to make the dessert chaffle.
Preheat waffle maker and spray generously with low carb non-stick spray.
In a large mixing bowl, add egg and beat until frothy.
Add vanilla and cheese and beat until well combined.
Take a small mixing bowl, whisk together flour, baking powder, sweetener, and cinnamon.
Then add dry ingredients to egg mixture and mix until just combined.
Gently fold in diced apples.
Spray waffle maker with cooking spray.
Pour batter into waffle maker on medium, high heat and cook until starting to brown on the outside – about 4 minutes.
Cool “chaffle” slightly, then top with vanilla sauce.

- ½ teaspoon vanilla extract
- 1 egg yolk
- 1 cup whipping cream

- 2 ounces cream cheese softened
- Vanilla bean whole
- Chaffle:
- 2 tablespoon coconut flour
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- ½ teaspoon monk fruit sweetener
- 3 large eggs
- ¼ cup granny smith apple skinned + diced (or 1 tablespoon natural erythritol apple flavoring)
- ¾ cup mozzarella cheese shredded
- ¼ cup mild cheddar cheese shredded
