First start by preheating oven to 350 Fahrenheit  and lining a baking sheet with parchment paper.
Combine cocoa powder, almond flour, salt, pure vanilla extract, pure peppermint extract, uncut stevia, and water into a medium sized bowl. Mix well to form a dough. 
Once the dough has formed pop it into the freezer for 5-10 minutes to allow the dough to harden. This makes it easier to roll out and cut the cookies.
Next roll out the frozen dough and cut the dough into circle with a cookie cutter (or use a jar lid or glass).
Place cookies in the oven and bake for 7 minutes. Allow the cookies to cool and firm up. When the cookies are cool place them in the freezer again (this helps the chocolate coating stick).
For the chocolate coating add the sugar free chocolate chips and coconut oil to a medium saucepan and carefully melt the chocolate. (The coconut oil helps to make the chocolate smooth.) When the chocolate is melted stir in the peppermint extract. 
Remove the cookies from the freezer and dip in the melted chocolate. Place on parchment paper and freeze.
