Start by preheating your oven to 325 degrees Fahrenheit. Then grab a baking sheet and place a Silpat or layer parchment paper. You can spray cooking spray on parchment to help prevent sticking (optional).
Next, scoop out the insides of your avocados and place in a bowl or food processor.
Then use a fork to mash up the avocado to a smooth texture, or toss in a food processor. You want the mixture to be creamy.
Then mix in your cheese, and spices along with salt and pepper.
Scoop around 1/2 a tablespoon of mixture onto your pan and flatten out as thin as you can get. This will give you that chip texture.
Cook for around 10-15 minutes. You want to see the edges become crispy, then flip the chips and bake an addition 5 minutes to crisp up the other side.
Place all chips on a cooling rack and allow to cool.
Serve and enjoy alone or with your favorite dip or keto friendly salsa.
