This Keto broccoli friend rice recipe is full of flavor and low in carbs. I am always searching for rice alternatives and I have got to say this recipe hits the spot. My kids gobbled it up and it’s always a nice surprise to see them eat broccoli, even if it was a bit sneaky.
Chinese food is definitely one of my favorites, and yes I miss fried rice dearly. But this broccoli fried rice recipe has all the flavors and textures without all the carbs.
How to make this yummy meal:
Start by heating 1 tablespoon of sesame oil in a skillet over medium-high heat.
Once the oil is hot add in the chopped onion, and cook for 2-3 minutes until it begins to soften.
Next add the riced broccoli into the skillet, and stir to combine the onion and broccoli. Cook and stir the riced broccoli for 4-6 minutes, or until it reaches the desired level of doneness. I prefer to cook my broccoli just a little longer, however it is a personal preference.
Once the riced broccoli is just about done cooking, add in 3-4 tablespoons of soy sauce, and stir to combine. I use low sodium soy sauce and prefer 4 tablespoons for this recipe.
With the broccoli off to one side of the skillet, and crack two large eggs into the pan. Stir them around to scramble them, and mix them into the broccoli fried rice as they finish cooking.
Garnish with freshly chopped green onions and sesame seeds if desired. YUM!
This recipe is a good meal prep option too, as it typically re-heats nicely.
