So last week I was really into casseroles, they are just so quick and hearty and my entire family loves them. I whipped up this keto and low carb cheesy green chile chicken and it was a hit. Southwestern flavors, moist chicken, and cheese create a yummy combination.
How to make this green chile chicken:
First of all preheat the oven to 375 degrees Fahrenheit.
In a medium mixing bowl combine softened cream cheese, drained cans of chopped green chiles, salt, pepper, and garlic powder. Using a mixer mix the mixture until it is well combined.
Place four chicken breasts in a greased casserole dish.
Layer the cream cheese and green Chile mixture on top of the chicken.
Next add the monterey jack cheese on top of the chicken and cream cheese mixture.
Cover with foil and bake in the oven at 375 degrees Fahrenheit for at least one hour or until the chicken is cooked through.
Enjoy! You can eat the chicken alone or you can get creative and add it to a salads, tacos, or with rice. This recipe is great for meal prep and leftovers too.
