Pumpkin Chaffle

It’s no secret I am bit of a chaffle addict, they are pretty much the greatest thing since sliced bread when it comes to the Keto lifestyle. I love chaffles and this pumpkin chaffle recipe is delicious for breakfast or simply when I need a sweet fix. It reminds me of a crispy and delicious Keto approved version of pumpkin pie!

What is a chaffle?

A chaffle is a low carb and keto friendly bread inspired option. Most chaffles are made from cheese and egg. Savory chaffles typically use more flavorful cheddar cheese, while dessert chaffles use mozzarella. You cannot taste the mozzerella cheese in the dessert chaffle.

Can you eat pumpkin on Keto diet?

Yes pumpkin is very low in carbohydrates and approved on the Ketogenic diet. The best news is pumpkin is in a lot of sweet and savory recipes that you can enjoy.

Can you eat pumpkin pie on Keto?

There are many different keto pumpkin pie recipes. I love to eat this pumpkin chaffle to satisfy my pumpkin pie cravings – it’s like pumpkin pie with a twist and it only takes minutes to make.

What kind of waffle maker do I need to make a chaffle

Any type of waffle maker will work to make a chaffle. For this chaffle recipe I just used my regular waffle maker. I also have used the Dash mini waffle maker which I definitely recommend if you are chaffle crazy like me. 

Can you taste the cheese in a dessert chaffle

No if you use mozzarella cheese the cheese flavor is so mild that it is completely masked. I have tested a few dessert chaffle recipes and I did think I could taste the cheese, but not with this pumpkin chaffle recipe. 

Can I freeze chaffles

Yes you can freeze chaffles. I recommend putting parchment paper between each chaffle and storing in an air tight container. 

How do I reheat a frozen chaffle

This is where it’s a little tricky. First you will want to let your chaffle thaw. Then for best results I recommend reheating a frozen chaffle NOT in the microwave. I like to use the oven or an air fryer. 

What sweeteners can I use for this dessert chaffle

For this dessert chaffle I used Stevia as a sweetener. You can use your favorite Keto approved sweetener for this recipe. Monk fruit is another sweetener option that I have tested with this recipe.

  • Keto Ice Cream
  • Buttercream Frosting – 1/4 teaspoon vanilla, 1 tablespoon powder sweetener, 2 tablespoons butter
  • Cream Cheese Frosting – 1/4 teaspoon vanilla, 1 tablespoon powder sweetener, 2 tablespoons cream cheese
  • Keto Whipped Cream
  • Keto Chocolate Chips
  • Sugar free syrup

How to make this pumpkin chaffle

First you will want to preheat your waffle maker.

Next in a bowl mix together the pumpkin spice, cinnamon, stevia, and cheese. Once combined continue to whisk it together well.

Add the pumpkin puree and egg to the mix and continue whisking until you have a well combined batter. The cheese may look like it’s not combined, but it will melt in perfectly later.

Then pour half of the batter in the waffle maker and cook until cooked throughly. The cook time will depend upon your waffle maker.

Repeat with the remaining batter. Let the pumpkin chaffle cool completely before serving.

Ingredients
  

  • 1/2 cup shredded mozzarella cheese
  • 1 large egg
  • 2 tbsp pumpkin puree
  • 1/2 tsp pumpkin spice
  • 1/2 tsp cinnamon
  • pinch stevia extract powder

Instructions
 

  • Preheat your waffle maker.
  • In a bowl combine the pumpkin spice, cinnamon, stevia, and cheese and whisk together.
  • Add the pumpkin puree and egg, continue whisking until you have a well combined batter.
  • Pour half of the batter in the waffle maker and cook until done. (Cooking time depends on waffle maker.)
  • Let cool for 3 minutes before serving.
