Ranch Kale Chips

Eating low carb has me totally missing chips, if we are being honest. These ranch kale chips are extremely healthy, flavorful, and have crunch to them! I even got my kids to try them and they approved.

How to make these yummy low carb chips:

First you want to preheat your oven to 275 degrees Fahrenheit. 

Then you will thoroughly rinse and pat the kale leaves dry. 

Next remove the middle rib from each kale leaf, and then cut or carefully tear it into slightly larger than bite sized pieces. Important to note: the leaves will shrink up a bit when they bake, so making them a little larger will have them come out bite-sized when they are done. 

Add the cut kale leaves into a large mixing bowl. 

Drizzle with 3 tablespoons of olive oil, and toss to combine.

Sprinkle with 1-2 tablespoons of the Ranch seasoning mix, and toss again until the mixture is added to the kale.

Then carefully lay the kale pieces out in a single layer on a parchment lined baking sheet.

Bake for 10 minutes at 275 degree Fahrenheit, remove, turn the leaves over, and then bake for an additional 10 minutes. 

Enjoy! Serve immediately once cooled or store in an airtight container for snacking.

  • 1 bunch of Kale

  • 1-2 tablespoons ranch seasoning
