This bacon wrapped mini meatloaf sheet pan meal recipe is the best for two reasons. One it’s simple, I love sheet pan meals because I don’t dirty a lot of dishes. And two it includes my favorite keto potato substitute – turnips. Turnips can be a major game changer if you miss potatoes on a low carb diet.
How to make this simple meal:
First things first you will want to preheat the oven to 400 degrees Fahrenheit.
Then in a large mixing bowl you will want to combine the green beans and turnips. Add in 2 tablespoons of olive oil and a dash of salt / pepper. Toss to coat the vegetables in the mixture.
Next in another mixing bowl you will want to combine the ground beef, salt and pepper, egg, crushed pork rind crumbs, onions, peppers, garlic powder, onion powder, basil and sugar free ketchup. Mix the mixture with your hands until well combined. The fun of meatloaf and getting to mix with your hands. Haha!
Place the vegetables on a large sheet pan in a single layer. Leaving room in the middle of the tray for the mini meatloaves.
For the bacon wrapped meatloaf form the meat mixture into 6 small loaves. And then wrap each mini loaf with two slices of bacon. (Seriously the best part!) Place the mini meatloaves in the center of the baking sheet surrounded by the vegetables.
Bake at 400 degrees Fahrenheit for 40 minutes ensure that the meatloaf is cooked through and the vegetables are tender.

Bacon Wrapped Mini Meatloaf Sheet Pan Meal
Ingredients
- 2 pounds lean ground beef
- 12 slices bacon
- 1 cup chopped onions
- 1 cup chopped green peppers
- ½ teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon basil
- 3 tablespoon sugar free ketchup
- 1 egg
- 1 cup crushed pork rind crumbs
- 1 pound green beans with the ends snapped off
- 5 turnips cut into small wedges
- 2 tablespoons olive oil
- salt and pepper optional
Instructions
- Preheat the oven to 400 degrees.
- In a large mixing bowl, combine the green beans and turnips. Toss with 2 tbsp of olive oil and salt and pepper to taste.
- In another mixing bowl, combine the ground beef, salt and pepper, egg, crushed pork rind crumbs, onions, peppers, garlic powder, onion powder, basil and sugar free ketchup. Mix with your hands until well combined.
