This is one of those recipes that everyone loves, plus low carb and keto friendly. It’s easy with only ten minutes of prep time – so cheesy, full of flavor, and hearty too!
How to make this cheesy broccoli casserole:
First things first, preheat your oven to 350 degrees. Next defrost the broccoli if you haven’t already done so and are using frozen broccoli, you could also use fresh broccoli.
Then combine the defrosted broccoli, sour cream, egg, cream cheese, butter, 1 cup of the shredded cheddar cheese as well as salt and pepper to taste into a large mixing bowl.
Stir together until the mixture is combined, making sure every piece of broccoli is covered with the cheesy mixture.
Layer the broccoli mixture into the bottom of a greased casserole dish. Spread it out evenly.
Sprinkle the other cup of cheddar cheese on top of the broccoli mixture.
Top the casserole with the crushed pork rind crumbs. YUM! This gives it a delicious crunch, but you could totally omit if you wish.
Bake at 350 degrees for 30 minutes until the casserole is browned and bubbly.
Let sit for 5 minutes, and serve hot.

- 5 cups frozen chopped broccoli defrosted
- 1 cup sour cream
- 1 egg beaten
- 6 ounces softened cream cheese
- 1/2 onion chopped
- 1/4 cup butter unsalted
- 2 ounces crushed pork rind crumbs
- 2 cups shredded cheddar cheese
- optional dash of salt and pepper
Instructions
- Preheat the oven to 350 degrees.
