Healthy, quick, and easy these garlic parmesan broccoli bites are so yummy! My friends and family always rave about these as an appetizer, but they would make a great snack too.
How to make this appetizer:
This recipe is great because you can fry the bites in an air fryer (super easy) or on the stove if you don’t have an air fryer. If using an air fryer preheat (if needed). If you are frying in oil on the stove, place the oil in a deep skillet or pot, and begin to heat it over medium heat.
Next in a shallow bowl combine the crushed pork rind crumbs, parmesan cheese, Italian seasoning, as well as a dash of salt and pepper.
Add the two eggs and 2 cloves of garlic in another shallow bowl. Beat together to combine until mixed well.
Then you want to dredge the broccoli florets in the egg mixture, and immediately place into the pork rind mixture. Set them aside on a plate until you have finished coating all of the broccoli florets.
At this point you would place the coated broccoli in the air fryer or place the coated broccoli into the heated oil on the stove using tongs.
You will want to cook for 3-5 minutes until the outside is golden brown, and the broccoli is tender. You can flip the florets from time to time with the tongs to make sure all sides cook evenly. (Note if cooking in the skillet: do not heat your oil up too quickly or at a high temperature, because the outside of your broccoli bites will burn while the inside remains uncooked. )
Serve immediately with a keto dipping sauce!

- 1 head broccoli cut into florets
- 1 cup crushed pork rind crumbs
- ½ cup parmesan cheese grated
- 1 teaspoon Italian seasoning
- salt and pepper optional
- 2 cloves minced garlic
- 2 eggs beaten
- oil for frying in a pan or an air fryer
Instructions
- If frying in oil on the stove, place the oil in a deep skillet or pot, and begin to heat it over medium heat. If you are using an air fryer, begin to preheat (if necessary).
- Place the crushed pork rind crumbs, parmesan cheese, Italian seasoning, as well as salt and pepper to taste in a shallow bowl, and combine well.
- In another shallow bowl, combine the two eggs and 2 cloves of garlic. Beat together until it is mixed well.
- Dredge the broccoli florets in the egg mixture, and then immediately into the pork rind mixture. Set them on a plate until you have finished coating all of the broccoli florets.
