This buffalo pasta is just what I needed on this egg fast. Now don’t get me wrong, I am definitely not tired of eggs. This recipe though will make you forget that you are even eating eggs. It would also make a delicious non-egg fast Keto meal and you could add in chicken or shrimp. YUM!

How to make this low carb pasta recipe:

First reheat oven to 375 degrees Fahrenheit and grease a 8×8 pan extremely well. You definitely want to pay attention to this step otherwise it can be hard to get the “noodle” out in one sheet.

Then in a blender combine two eggs, garlic, cream cheese, and black pepper. Blend until the mixture is well combined.

Pour the mixture into the sheet pan.

Bake at 375 degrees Fahrenheit for 9 minutes or until the eggs are done. Remove from oven.

Using a spatula carefully remove the mixture from the pan so you have a solid sheet of noodles.

Then carefully roll up. Cut into pieces, as thin or wide as you prefer for your noodles. Unroll the noodles after they are cut.

Now to make the sauce. Add the butter, Parmesan cheese, Mascarpone, and buffalo size to a small microwave safe bowl. Microwave in thirty second increments, whisking in between. Once the sauce is melted and whisked. Toss and carefully add to the noodles!

Enjoy! This recipe makes one serving of pasta. You could double it, but would need to use a bigger pan. I tried to use this for meal prep, but the noodles don’t hold up to re-heating so it’s best just to make and eat.

  • 1 ounce mascarpone
  • 1 teaspoon buffalo sauce
