How to make this refreshing low carb smoothie:
Add all ingredients except the ice cubes into a blender and process until smooth.
- 1 cup baby spinach, lightly packed
- 1/4 cup unsweetened shredded coconut, plus 1/2 teaspoon more for topping
- 1 tablespoon golden flaxseed meal
- 1 tablespoon fresh lime juice
- 1 teaspoon vanilla
- 1/2 teaspoon lime zest
- 1 pinch sea salt
- 1 (1g) packet Stevia / Erythritol blend OR 2 teaspoons honey OR 1 tablespoon maple sryup (see note)
- 1/2 cup plain unsweetened almond milk
Add the 1 cup of ice cubes and process until thick and creamy, being careful not to over blend.
Serve immediately.
